Enjoy this healthy tuna salad with sweet potato, for an easy low calorie lunch. (from the MOM and WOW Diary)
This recipe is low calorie and serves 1
100g peeled sweet potato, cut into 1cm pieces
40g mixed salad leaves
95g can tuna, drained, flaked
75g snow peas, trimmed, sliced
2 tsp fresh lemon juice
1 tsp extra virgin olive oil
1 tsp wholegrain mustard
1/2 tsp honey
Boil, steam or microwave sweet potato until tender. Set aside to cool.
Arrange the sweet potato, salad leaves, tuna and snow peas in a serving bowl. Whisk the lemon juice, oil, mustard and honey in a jug. Pour the dressing over the salad to serve.
