Exclusive MOM & WOW Diaries 2026 Recipe by Justine Drake: Aloo Gobi (Potato & Cauliflower Curry)
We’re back with another exclusive recipe by the wonderful Justine Drake, straight from our MOM & WOW Diaries 2026. Each month, we’ll be sharing one of Justine’s easy, wholesome, family-friendly recipes to help make cooking feel simple and joyful.
This month’s recipe is a classic Aloo Gobi, a traditional Indian potato and cauliflower dry curry that is super delicious, budget friendly, and comforting.
It works beautifully as a main meal served with sambals, chutney, and yoghurt, or as a flavour-packed Indian-style side dish.
Ingredients (Serves 6)

Glug vegetable or coconut oil

1 Tbsp (15 ml) black mustard seeds
-
1 onion, chopped
-
2 tsp (10 ml) grated ginger
-
2 cloves garlic, crushed
-
12 curry leaves, pulled off their stalk
-
1–2 chillies, seeded and chopped
-
3 cardamom pods, bruised
-
1 tsp (5 ml) ground turmeric
-
1 Tbsp (15 ml) ground coriander
-
2 tsp (10 ml) ground cumin
-
16 baby potatoes (or 4 medium potatoes), cut into chunks
-
About 400 ml vegetable stock
-
1 small head cauliflower (or half a large one), cut into large florets
-
Handful fresh coriander
-
Coconut shavings and garam masala (optional)
Method
-
Heat oil in a large pan and add mustard seeds.

When the seeds begin to pop, add onion, garlic, ginger, curry leaves, chilli, and spices.

Fry for a couple of minutes, then add potatoes and toss to coat.

Add just enough vegetable stock (or water) to almost cover. Season, cover, and simmer gently for about 15 minutes.

Add cauliflower florets, stir, and add more stock as needed (about just over a cup). Replace lid.

Cook over gentle heat until vegetables are tender and liquid has reduced, about 15 minutes.

Season to taste with salt and pepper, sprinkle generously with chopped coriander, and serve with tomato and onion sambal, chutney, and yoghurt.

Serve topped with toasted coconut shavings and fried fresh curry leaves.

Swap yoghurt for raita (grated cucumber mixed with yoghurt and cumin seeds).
