This Quick Ramen with Vegetables & Eggs is fast, fragrant, and perfect for busy weeknights or a cosy lunch. Cooking the noodles separately ensures your broth stays silky and light while the aromatics give the soup incredible flavour.
Straight from our MOM & WOW Diaries 2026, it’s an easy, nourishing meal that’s full of vegetables, eggs, and deliciously seasoned broth.
Ingredients (Serves 4)

Glug vegetable oil

1 tsp (5 ml) sesame oil

2 smoked pork rashers or 1 gammon steak

1 bunch spring onions, chopped (save some for garnish)

3 cloves garlic, crushed

1 Tbsp (15 ml) grated ginger
-
3 cups (750 ml) good clear chicken stock
-
3 cups (750 ml) good clear beef stock
-
Soy sauce and a squeeze of lime or lemon

1 packet (350 g) egg noodles, cooked
-
1 packet (80 g) baby spinach
-
Handful of coriander for serving

4 soft boiled eggs
-
Chilli paste (like sambal oelek), for serving
Method

Heat oils in a saucepan and sauté pork, spring onions, garlic, and ginger for 1–2 minutes.

Add chicken and beef stock, bring to a boil, then cover and simmer for 10 minutes.

Season to taste with soy sauce and lime or lemon juice.

Divide warm noodles, spinach, and coriander between bowls. Ladle over the soup.

Top each bowl with halved soft boiled eggs and serve with chilli paste.
Just a Thought

Use leftover cooked pork or chicken if preferred.

Add other quick-cooking vegetables like mushrooms or bok choy.

Adjust chilli paste to your spice preference.
